Baked Oatmeal

One of the kids' favorite breakfasts is Baked Oatmeal. We were given this delicious recipe from my good friend, Tami, years ago. I love that I can prepare it the night before, and put it right into the oven in the morning. It's easy, it's yummy, and just perfect for a chilly fall or winter morning!
Here is the basic recipe, but it's so versatile, you can add anything you like to change it up a bit. We like to add raisins, or bananas, or apples, or blueberries. But we love it "as is" too!
Baked Oatmeal
4 cups Old Fashioned oats
1 cup brown sugar (this can be reduced if you're adding fruit)
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
2 eggs
1 1/2 cups milk
1/2 cup (1 stick) butter
Mix all dry ingredients together. Add in wet ingredients, mixing well. Pour into an ungreased 9 inch square pan. Chill overnight in the fridge. Then put in a cold oven and set to 350* for about 45 minutes to an hour.
Serve either "coffee cake" style, or place in bowls and pour milk over it to give it more of a traditional oatmeal consistency. Enjoy!
*We double this for our family and place in a 9 x 13 dish.

1/2 c sugar
2 eggs
1 c milk
1 T bkg powder
1/2 t salt
3 c oats
1/2 c raisins
1/2 t cinnamon
2 T brown sugar
Mix applesauce and sugar. Add milk, eggs, bkg pdr and salt. Add oats and raisins. Put in greased pie dish. Top with cinnamon and brown sugar. Chill in fridge overnight. Bake at 350 degrees for 35 mins.
